Stuffed Mushrooms


Stuffed mushrooms are quick and easy, but can look impressive. Serve them with dressed green leaves and they are the perfect starter or snack! Allow one mushroom per person.

Ingredients
3 large cup mushrooms, stalks removed
1 small white onion, diced
3 cloves garlic, diced
1 large handful grated mature cheddar cheese

Method

  1. Bake the mushrooms for ten minutes at 180c, then turn them upside down while they cool. This will allow the liquid to drain out so that they won't be soggy.
  2. In a knob of butter, gently fry the onion and garlic until soft.
  3. Turn off the heat, add the cheese and stir well until it has all melted and everything is combined.
  4. Turn the mushrooms the right way up and spoon the mixture into them.
  5. Place under a hot grill until the top is light golden brown and bubbling.
