Egg Fried Rice


I love egg fried rice. It's so versatile and will accompany so many different Chinese dishes. Here's my recipe for delicious homemade rice, which means you can control what's in it and also save some money by cooking at home rather than ordering takeout!

Ingredients
1 teacup of white rice
2 tablespoons peanut oil (or vegetable oil if you prefer)
1 tablespoon soy sauce
1 white onion, finely diced
2 cloves garlic, diced
3 eggs, beaten
2 spring onions, finely chopped
Salt & pepper to taste

Method

  1. Cook the rice until just sightly soft, but still with some bite.
  2. In the oil, fry the white onion and garlic until soft.
  3. Add the beaten egg and gently cook, breaking it up constantly with a wooden spoon so that it is in small pieces.
  4. Add the drained rice and stir through fully, cooking for a couple of minutes.
  5. Add the soy sauce, and season to taste. Stir through.
  6. Add the spring onions, stir through and serve!
