Arrabiata Spinach Spaghetti


Sometimes you just want an easy dinner, made from store cupboard ingredients and requiring minimal effort. This is one of those!

Serves two

Ingredients
1/3 pack dried spaghetti
6 "blocks" frozen spinach
1 onion, chopped
1 red chilli, chopped
2 cloves garlic, diced
400g tin chopped tomatoes
1 tbsp tomato puree
100ml boiling water
Salt & pepper to taste

Method

  1. Add the spaghetti to a pan of boiling water, and cook as per pack instructions.
  2. In a separate pan, fry the onion, garlic and chilli in vegetable oil over a gentle heat, until soft.
  3. Add the tomato puree, chopped tomatoes, spinach and water, and stir thoroughly.
  4. Bring to the boil and then reduce to a gentle simmer.
  5. In around ten minutes, the sauce should have reduced to be thicker.
  6. Stir to ensure that the spinach is evenly distributed.
  7. Season to taste.
  8. Drain the spaghetti and add to the sauce.
  9. Stir thoroughly and serve.
  10. Sprinkle grated parmesan over the top for an extra treat.
