Sometimes you just want an easy dinner, made from store cupboard ingredients and requiring minimal effort. This is one of those!

Serves two
Ingredients
1/3 pack dried spaghetti
6 "blocks" frozen spinach
1 onion, chopped
1 red chilli, chopped
2 cloves garlic, diced
400g tin chopped tomatoes
1 tbsp tomato puree
100ml boiling water
Salt & pepper to taste
Method
- Add the spaghetti to a pan of boiling water, and cook as per pack instructions.
- In a separate pan, fry the onion, garlic and chilli in vegetable oil over a gentle heat, until soft.
- Add the tomato puree, chopped tomatoes, spinach and water, and stir thoroughly.
- Bring to the boil and then reduce to a gentle simmer.
- In around ten minutes, the sauce should have reduced to be thicker.
- Stir to ensure that the spinach is evenly distributed.
- Season to taste.
- Drain the spaghetti and add to the sauce.
- Stir thoroughly and serve.
- Sprinkle grated parmesan over the top for an extra treat.
