One of my favorite things to do, is create delicious dishes. This is a recipe that I was given years ago, that I have since tweaked in my own way. The result is similar to a balti - perfect served with shop bought naan bread and some rice, to quash those takeaway cravings!

Serves 2
Ingredients
2 chicken breasts, diced
1 onion, chopped finely
2 garlic cloves, diced
1 green pepper, chopped finely
300ml chicken stock (from a cube is fine)
1 tbsp tomato puree
1 tbsp plain flour
1 tbsp curry powder (select the heat to your own taste)
1 tsp fresh ginger (I use the puree)
1 tsp ground cumin
Salt & pepper to taste
Method
- In some vegetable oil, gently fry the onion, garlic and peppers over a medium heat until the onion is translucent.
- Add the diced chicken, and fry until sealed on each edge.
- Add the flour, curry powder, ginger and cumin and stir thoroughly, until everything is well coated.
- Add the tomato puree and stock, stirring well until combined.
- Simmer on a low heat until the sauce has thickened and the chicken is cooked through - around 15 to 20 minutes.
- Add salt & pepper to taste, and serve your favourite accompaniments; mine are rice, naan or dhal.
