Here I am!

Goodness me, it's been a while! So I've been a really terrible blogger, and not posted anything at all for a number of months. Six of them to be precise.

It's been a bit of a mad time, just being a mum and working, and trying (and failing) to maintain some level of sanity!

But whilst I have been neglecting you all, I did adapt a rather fantastic Blondie recipe, that I simply must share. The photo itself shows a Brownie & Blondie cake, sandwiched together with peanut butter frosting, that I made for Mr W's birthday. Here is the recipe for the perfect chocolate brownie , and this recipe is for the Blondie layer...

Bridget's Blondies



Ingredients
8oz caster sugar
4 eggs
8oz butter, melted
5½oz plain flour, sifted
8oz white chocolate, chopped
3½oz peanuts, chopped


Method
  1. Preheat the oven to 180C & grease an 8in square cake tin.
  2. Beat together the sugar and eggs until pale and fluffy. Beat in the melted butter a little at a time, making sure each addition of butter is fully mixed in before adding the next.
  3. Add the flour and carefully fold it into the mixture using a metal spoon.
  4. Add the chopped white chocolate and peanuts and gently fold them in.
  5. Spoon the batter into the tin and level out. 
  6. Bake for 30-35 minutes, or until a skewer inserted into the centre of the brownies comes out clean. Set aside to cool, then cut into small squares or bars.
