The perfect chocolate brownie

MOIST. It's a filthy sounding word, but definitely the one I like to use to describe my brownies! Nothing worse than a cakey, dry lumpy thing that feels like sawdust in your mouth and makes swallowing feel like medieval torture. The following recipe can only be described as utterly filthy and waistline destroying. My idea of heaven!

Bestest brownies

250g butter
200g white chocolate broken into pieces
80g cocoa powder
65g plain flour
360g caster sugar
4 large eggs



  1. In a bain marie, melt the butter & chocolate together.
  2. Combine the dry ingredients in one bowl, and in another beat the eggs until pale.
  3. Mix the eggs into the dry ingredients.
  4. Add the melted butter and chocolate slowly, stirring all the time.
  5. Pour into a greased silicone cake tray, and bake for 30-40 minutes until spongy on top but still wobbly.
  6. Stand for 15 minutes, then turn out onto a wire tray to cool.
  7. Once cool, slice into desired sized pieces & store in an airtight container.
